Yo-Sushi, Wagamama, Itsu…a visit to one of these ubiquitous high street chains may be the first time many people come into contact with Japanese food, but how accurately do they reflect food culture in Japan? In this session, Makiko Sano, restaurateur and author of the bestselling book Sushi Slim, will reveal the realities of food in Japan. As well as looking at the seasonal variations in Japanese cuisine, Makiko will also introduce the Japanese specialities that are good (natto – fermented soybeans) and not so good (Teriyaki Burger) for the body.
