My grandmother introduced me to her friend, who was a monk. She was very old but was full of energy, and had amazing skin. She had been vegan for nearly all her life, and always cooked very simple, delicious food. In this lesson I would like to share with you the meals she taught me.

What you will learn –

  • Japanese stock (UMAMI) – Kelp, Shiitake and soy beans
  • Types of vegan protein
  • Balanced meals eaten by Japanese monks

What we will cook in this class –

  • Yuba (Tofu skin) with wasabi
  • Steamed Mooli with Yuzu Miso
  • Aubergine with Miso
  • Vegan broth (shiitake, Okra, sweet potato)
  • Steamed rice with tofu bag
